in film combat, camera angles are utilized heavily during those scenes, where for example the camera moves while a blow happens, blurring the action a bit so you don't see the other actor dodge out of the way, or the blow land short. the main part of film combat, as well as stage combat, is that the actor BEING 'hurt' is the one in control of the scene, not the one 'hurting' the other. for this scene, even though it looks like Charlie is cracking Wilbur's neck, Wilbur is technically in control the entire time, and twisted his head to the side when Charlie counted to 3. Coupled with the camera movement and the sound effect, and the amazing fall, it looks realistic.
