Thank you for this informative video. I am current doing the Champagne MOOC and strangely enough, the wholly French videos fail to mention the English connection with the origins of a deliberate second fermentation. I knew Dom Pérignon hadn't really invented modern Champagne but I didn't know we'd beaten the French to documenting it, which amuses me enormously. I hope I don't now discover that cricket was invented by the French.

Yeah, I had a Christmas epiphany (no pun intended) in the middle of recording my cast that even though I love my fans, viewers and subscribers and I love talking about wine, I needed to spend some time with the fam. Something is missing at 02:34 in the equation! Energy(heat) is produced together with the alcohol+CO2, and it's important because the temp can affect the yeast activity.
