A kitchen dish towel is better than paper, lasagne are not expensive: you can make your pasta (...noodles she calls it) with flour eggs & water, tomato sauce w/ real tomato, the pork is not necessary. Every Italian region in Italy have its own recipe :-D, you can choose!

Maybe they grew up on Stoffer's frozen lasagna or something, I dunno. Either Joy held back some secret ingredients, or folks just want her to make them one out of principle. There is something about getting a homemade dish like this that's pretty special. Regardless, it's really nice of Joy to share her famous recipe with us.

I’m Italian. I cook my sauce for hours and hours with basil, Italian seasonings, meatballs and sausage. When making my lasagna, like my Nana, we put in more meat, Hamburg and sausage, between all layers and we use a fork to crush the meat a bit. We make it a little different than Joy. We use to put egg in the ricotta mixture, now we don’t as it gets too runny. Also, a secret, we don’t ever put in sugar in the sauce. We put in 1-2 whole cloves[yep] cloves the kind u bake with. It does something to the sauce. Amazing!!! Manga!!!

That's how people from Campania do their Lasagna. All over Italy there are many different ways to make it, adding bolognese and bechamel sauce instead of sausage and ricotta is another way to do it.

I see so many comments from people on lasagna recipes about how "that's not how lasagna is made" that it is refreshing to see one that acknowledges that there are numerous lasagna recipes in Italy and every family has a family recipe. I watched an Italian lady make lasagna and she put sliced hard boiled eggs in hers...I had never seen that before. She explained that she grew up raising chickens and her family put eggs in almost everything.

I’m making your lasagna for the 2nd time. I’m 71, lasagna is my favorite food. By far. Remember Knotts Landing? I lived in L.A. and oh Thursday nights the girlfriends would gather at my home ~ I ate Stouffer’s Lasagna. It was the best in the grocery store and I didn’t cook. Now I’m in self isolation.
