Getting TOO low on D can be bad like you said. How are you gunna shuffle with the attacker if your legs are 3 metres apart. Obviously you still want to be in a good strong stance but I think good D is more than just getting low (getting good spacing, pre-predicting moves, staying in front of the attacker) Edit: I think especially against someone like cam who can shift you around so easily. Getting low does not sound like a great idea

I think height on defense is dependent on who you’re typing like what kind of guard and their height/weight, but for quick guards it is harder to move/switch your hips since they’re already stretched out
