Today, we have meatballs with a sweet and tangy red cherry sauce. I used 600 grams of veal shoulder and 400 grams of lamb breast. The meats were ground twice. Before grinding, the meat should be half-frozen or very cold. It’s better to freeze it for half an hour before cooking.
We have two slices of toast bread with 15 grams of parsley, which we put in the food processor until finely mixed.
Now, we have half a kilo of cherries, pitted, and one cup of barberries (soak the barberries in hot water beforehand and then strain them).
We have two onions: chop one finely and grate the other, squeezing out 50% of its juice.
Now, add the spices, the bread and parsley mixture, one egg yolk, and the grated onion to the meat. Knead well and let it rest in the refrigerator for half an hour.
Next, put the cherries and barberries in the food processor and blend completely, then strain to extract the juice and set aside.
In the next step, form the meat into small, tangerine-sized balls and fry them in a pan. In the same pan, sauté the onions and add the spices. Dissolve a meat stock cube in a glass of hot water and add to the pan, then add the cherry and barberry juice. Once it starts boiling, add the meatballs to the pan and let them cook on low heat for half an hour with the cherry sauce.
Make this dish while fresh cherries are available. It’s very delicious for gatherings and nutritious for children.

Reshteh Polo is one of the traditional and popular Iranian dishes, cooked in many parts of the country. Due to its simple and accessible ingredients, this dish has gained special popularity. Ingredients for Reshteh Polo:

Let the contents of the pot cook for about 10 minutes over the heat. After the water is completely absorbed by the rice, lower the heat and let it cook for another 20 minutes. Finally, for better aroma and flavor, you can add a bit of saffron.
