H T - I’m thinking it’s because they don’t let the islanders sleep at the same time every night, they most likely only give them permission to sleep when they feel that they have enough content for that day/night. If nothing is happening that night & not much happened in the day, they will most likely sleep very late, because the producers will be setting up chats, etc. So they don’t want the islanders to know they went to bed at 4/5am for example. Eve said she noticed it was already getting sunny outside when they went to bed once.
