I do know that as a rule no stuntman will do this stunt if the windshield isn't using safety glass especially with much older vehicles from before the time when safety glass was required in vehicles by law.

What do you mean? The guns are very real and she is only surviving because of her special ability to read the bullet trajectory based on small moves like muscles tensing up. If you mean her gun, like several fictional gun slingers before her, she doesn't want to kill anyone so she uses special non-lethal rounds while everyone else uses regular rounds.
