*Also Guga, you should do a PSYCHOLOGICAL EXPERIMENT on your family. Make 3 regular “Guga steaks” (just salt, freshly ground pepper, garlic powder and nothing else) and serve them to Angel, Leo, and Mau-Mau. Tell them it’s an experiment and you want them to let you know which steak tastes better. However, they’re all the SAME steak! But they won’t know that. You should even try to use the placebo effect on them and point to one of the steaks and say, “I think you guys will REALLY like this one!” but again, it’s just another control steak. Make them think it’s different and maybe their brain will actually make them taste something different.*

I've thought this before, I agree. I believe they'll know though they always do but the placebo effect of what guga might say may change the outcome.

To add some more depth to the bone marrow, use the roasted bone marrow to make a bone broth. After the fat has cooked with veggies and spices for a low and slow, de-fat the broth and use that to make the compound butter. Also, Guga, you need to try confit cherry tomatoes. Add the tomatoes, garlic cloves, oil, and rosemary to the oil and bake until the tomatoes start bursting. The solids are now insane flavorings and the oil can make a sauce worthy of gracing the Queen.

So now you need to do the same experiment again only use naughty butter as the base butter. And make the butter of the gods with naughty butter and compare it to the original.

a pro move with the burnt butter is to let it cool to room temp and then whip it with a mixer and brown sugar. Do it on homemade rolls. its literally incredible

I just recently had a few firsts thanks to you! 1. Medium rare, I always went medium until I tried MR, WOW! 2. Filet Mignon, all I need to say is OMG! 3. Dry aged KC bone in strip. I am going to try to dry aged some steaks myself because what in the world, this was the best steak I have ever had. Thank you Guga!

Guga, a wonderful side dish I have had the past few days is simple skewer-grilled baby potatoes. All we do is cut baby potatoes in half, skewer them with metal skewers, spray them with cooking oil, and add some popcorn salt on top before grilling them for 45 minutes to an hour. I wonder if you and the guys would like them, and how you would change them to be a little bit extra!

Here's something I don't think you've tried: Fermented Shrimp Paste. Also known as BAGOONG in the Philippines and most southeast asian countries. Commonly found in most asian supermarkets or well stocked asian sections in mainstream american supermarkets (ie not that hard to attain). Perhaps try initially as a compound butter? Or a dry aging method? Or a marinade when putting into sous vide? I'd be interested to see if you're down for trying, Guga.🤔

You're correct. The technique comes from France, and it is originally called "beurre noisette" which translates into "hazelnut butter".

While I do enjoy brown butter it goes better with desserts rather than savory dishes to me. I even did a side by side on steak a couple years ago while my wife was tolerating my "journey to making the perfect steak" phase, and both my wife and I preferred regular non browned Kerry gold for this.

You always use garlic powder to season your steak, but I was wondering if it would not be better to use other garlic seasoning like fresh garlic, garlic paste or some kind of garlic compound better ? You should try one of the best Greek butter and I think that you might be blown away man. The Greek "Staka butter" or "Στακα" mix it with oregano and black Greek truffle and then see the difference on the steak.

Hey Guga, it's me again! Please cook some Filipino food? My personal recommendations are pork sisig, kare-kare, pancit palabok, and pancit malabon, while the more popular recommendations would be chicken adobo, pork sinigang, and beef bulalo. As always, I'd be interested to see you compare trying it traditionally and putting your spin on it, although doing it sous vide would be most recommended for all these dishes.

I put the butter in a glass dish and set it in the smoker with the meat until it clarifies and the milk solids cook enough to strain out. I just spoon it over the steak when ready to serve. It might be better if I cooled it and rolled it up, but at my house it never makes it that far! Have you ever tried smokey butter Guga?

The Kerrygold is by default a salted butter except if you go for the unsalted version usually available but not obvious to differentiate when shopping . Also note that salted butter reaches its burning point quicker than the unsalted one because of the salt . If you want to really have a better control of the process get an unsalted gastronomic butter (at least 80% fat) and season according to your taste .
