That is Panko, Japanese style breadcrumbs made from Shokupan bread that is processed into large flakes. This results in an lighter and crunchier texture compared to regular breadcrumbs.

Here in the southwest United States desert, the sauce we put on pork is spicy/vinegary because it cuts the richness of the pork… I wonder if this guys sauce is the same way?

I've seen plenty of videos where the cutlets of pork are twice as thick as this. The ham yes that's a thick cut. Looks good but he should not be wearing that watch while mixing the meat. Jewelry harbors so much bacteria and he's got his watch in contact with the food, YUCKY!
