Both, there are machines that fillete fish and it can be done by hand. Humans are just as fast as machines if they have proper training. Should not take more than 10 seconds to cut the fish :D On the fishing boat I worked at we had machines but it was kind of faster to do it by hand. But much easier to do it with machine xD

Nick, tell Malena that USA have EXTREMELY fresh fish...USA has restaurants that have life fish trucked into their kitchens alive in fresh salt water vats still swimming and they kill it right before they cook it. It is AS FRESH as anything in Norway. There are PLENTY of places like it and even in Austin. She has a mental block I know and she probably will never admit it, but she would love the fish at some fine seafood places. I always laugh when she acts like the fish in Norway is more fresh than anywhere else LUL Also you two should travel to Alaska as well super fresh fish there and many places on the EAst Coast...I am sure Malena saw a tiktok somewhere that said fish caught on the USA coast have some weird things in them.....its false...just as fresh as anything in Norway, and as clean....just stay away from the HUGE cities coast lines which is about 95% of the coast line that is not near big cities and very fresh sea water.
