Maybe for the sticky candy you could break it up for bark as some say, also for the "salvagableable" peices you could dust them with a confectioners sugar, confectioners sugar/cornstarch mix and/or just a bit of cornstarch to "dry" it a bit for an oopsie bag batch? That way if you do do some oopsie bags you may be able to keep it from clumping again. I have done this with my cinnamon hard candy. My candy is just cooled on a baking sheet. Broken up by cracking with a butter knife handle and if it feels sticky I coat it in the confectioners sugar and bag it. It does fine for me.

I want to work in a place like this, but I'd be sweating like crazy for sure. I work packaging foods with machines in a cooler and I still get too hot. And if they make me work in the non-cooler area I start dying (which happened yesterday 😳). I considered applying to a sweet shop when I was looking for a job, would've been wrapping chocolates, but it was just a tad too inconvenient to get to and minimum wage (I'm assuming. Keep in mind it's zero experience needed [nor do I have any] and they didn't post the wage). But then I found a job at my current company which started above minimum and I got to work in a cooler environment. Now that I've had a couple department changes at least I can say I have more useful experience (especially the machining part) if I ever find a different job that pays well. Aaanyway, no one cares. My main comment was just the first sentence, haha.

For the spicy candies, try mango, lime, with a tiny bit of spicy, …. Don’t use a sharp heat, because it burns without flavor. You want a more muted heat. Once you perfect the candy, hopefully not too spicy, because the best part would be encrusting/pressing the candy into a coating, like Tajín. Or you could make your own, but Tajín is a name brand. I little spicier than Tajín would be nice.
