A carrot cake flavor would be lovely around Easter. Also a tip, place your flavor dust in a cheap plastic salt shaker. Will make it easier to put on candies and help conserve more for later use.

I don’t know if this has been suggested but you could do a neopolitan flavor. Just have the inside be strawberry and vanilla and just enrobe in the chocolate. I personally think it would be better in dark but I’m a dark choc lover but I’m sure milk would be good too.

You should try specialized salts for candy. I use different ones like smoked salts, natural black salts, dark red salt ect...

You can buy the freeze dried fruit in powder form love it for flavouring icing. My favourite chocolate ever is whole freeze dried black currants in dark chocolate. You should give black currants a try if you can get them.

I know they like the drops, however wouldn't it be more consitent making larger 'area' then using a jig to cut them into squares? it would make it so the layers would be the same. I noticed the pieces placed on enrober are varying quite a bit on how much of each flavour layer.

I feel like it would be relatively easy to set up a cheap oven as a dehydrator (or just buy a dehydrator). Then you could do more with using dried and powdered fruit as accents. Of course, as with anything at Hercules, space is going to be a huge factor nowadays. Adding powdered fruit on top of a variety of creams could be visually distinctive (or everything might be brown of course)...

Yeah, the strawberry powder was made from freeze dried strawberries, not dehydrated strawberries. Even a small home freeze dryer will set you back a couple grand. Not sure it would get enough use to justify the purchase

You need to invest in a freeze-dryer. Fruit can become a crunchy addition, or a powdered topping. And freeze dried candies can be quite different from what they started out as. Maybe find one to borrow and do some experimentation?
