Well, technically it's just chicken soup it's just made with old hens and roosters that are no longer really "fit to fry." The old folks always said it was the best chickens to use for soup.

Science has determined it's true that chicken soup helps relieve colds. Here's what science says; Chicken is especially rich in a compound called carnosine, and it's this that studies suggest helps reduce that stuffy, congested feeling in your nose and throat. It's thought that carnosine minimises inflammation in the upper respiratory tract by stopping the migration of white blood cells.

In many areas including the Caribbean, it wad also known as Cock (rooster) Soup. Definitely don't hear that one much anymore for obvious reasons. 😂 For years we had a pouch of dehydrated instant "Cock Broth" with a big image of.a Rooster on it. We kept it prominently visible in our kitchen. It was quite the conversation-starter 😊

Mr. Gull Sher has the right of it when he says all the chickens available to buy are broilers. Those Cornish Rock crosses grow so big, so fast, and with such little feed that you don't see anything else. Forty years ago, you could still walk into a grocery and choose from roasters, fryers, broilers, and even capons. The quality and price are better today, but it's a shame that all those heritage products are gone forever.

I find it interesting that these folks tend to think of soup as a hot "drink", similar to tea or coffee, where Westerners (at least here in the US), tend to think of it more or less, as something that we "eat". We'll have soup as a meal, accompanied by some type of bread or maybe a green salad. I know that in restaurants, the "soup of the day" special, consisting of soup and a half sandwich or a green salad, is a very popular lunch item but the soups that they offer as a part of that meal, are generally heartier and contain some mix of meat and/or vegetables. Making a plain broth is something that we often see reserved for use as an ingredient in cooking, or for those times when someone is trying to strengthen their immune system (bone broth) or if they have a cold/flu or are feeling under the weather. Growing up, I often heard chicken soup referred to as "Yiddish penicillin". LOL That just shows that there are more similarities between cultures than we sometimes think. 😊

Growing up in Sevier County, Tennessee and having chickens we used to eat rooster soup in the winter, usually. Old roosters and hens were usually not the best to fry or bake so you use them in soup. You can eat the meat of course but when I was a boy I "put it aside" like these folks. Coming in from playing out in the snow to a cup of hot rooster soup is one of the "good memories." I have been away from Tennessee for 40 years and this is the first time I've heard "rooster soup" since I was a teenager. lol

Well, am and old Michigan farm boy. We raised chickens and pigs, most of the chickens were layers. When you had an older, tough bird, we called is rooster soup. You really had to cook the hell out of old birds, and they had no market value. We made a dish called sliders, but not the burgers. It was a chicken broth with an old bird with homemade, thick, handmade noodles. It’s “poor people’s” food. I make it on a cold winters day, but it never turns out like my grandmothers. It’s so good. A real stick to your ribs meal.

Roosters are not usually eaten unless they are getting older or not doing their job protecting the hens. Also, a mean rooster who picks on the other hens and rooster's will end up on the table.
