This Chicago stand invented the Polish sausage as we know it

oday we meet up with that restaurant’s chef Phillip Foss at Jim’s Original, a Polish sausage stand that has been operating almost continuously for 76 years, closing only briefly to move from its original home on Maxwell Street over to Union Street, where it’s open 24 hours a day, every single day of the year. (Yes, even Christmas and Thanksgiving.) Jimmy Stefanovic, who purchased the stand from his aunt way back when, is credited with inventing the Chicago-style Polish, which features grilled onions, mustard, and sport peppers. (And nothing else.) It’s fantastic.

You say "polish sausage" but which one of them ???? We have hundreds types with different taste, colours, textures, soft, medium , hard ,dryed , etc etc etc. For hotdogs i recommend: kiełbasa śląska or kiełbasa podwawelska, or kiełbasa zwyczajna.

I grew up in the Chicago area, but had to move 10 years ago. I've been trying to figure out this exact issue Pitur. What do you buy to get the "Chicago" version of the Polish Sausage. Can't get a good pizza, good Italian beef, or a good Polish (sausage) out here in DE. Looks like this is another thing I will have to bring back from my visits...
