Me too. I just squeeze it, and if I want to completely squeeze out the water, I use a towel. And I also learned the whole freeze and thaw. It's easier to get the water out only thing I don't like is the change of texture but it's okay.

When making TFC fake chicken using a slow press makes a big difference for me. A towel doesn't get everything out and the extra water totally changes the flavour/texture plus leaks into the boiling oil.

Putting in the freezer for a night and defrosting changes the structure and you can squeeze so much water out with your hands and don't need a press or towels I put a load of tofu in the freezer for a night then put them in the fridge for whenever I need them

Absolutely! I got into the habit of freezing appropriate veg for stock it;s actually a no brainer and yes no waste. I volunteered in a soup kitchen for a while and the stuff people were throwing out .... the wonderful thing is that 75 percent of the people chose the vegan alternative so we must have been doing something right lol.

Derek's right, this will change your life! I made this for an elevated Sunday dinner and it was fantastic! The gravy is to die for and will be a staple in my freezer. That panko crust with the fresh herbs was mmm, mmm, good! I can see using it on other dishes like as a crunchy topping for Mac n Chz. It wasn't hard, but a little time/effort - but totally worth it for a true chef inspired meal! Thanks!!

I am vegan, I use a tofu press and love it. My wife makes her own tofu, we've done that and storebought. In both cases it's much better pressed. We press for at least an hour. It helps with the great white void problem, speeds cooking up too. Easy way to avoid the white void is to chop that tofu to bite size pieces. But I'm betting you knew that. The presentation on the whole tofu blocks is lovely and I'm sure you're just trying to present it as quick, simple, and pretty. Which it completely is. I love your content.

Frankie's wooff of approval from Frankie is a great way to end this video. Tried cooking w tofu the first time this week, cooked a korean tofu stew jjgae using up all the veges in the fridge before they spoiled and it was delish. Tofu was still a bit bland but wasn't too bad for my first time cooking. Your dish has all my favourite foods (mashed potatoes, vege medley, heaps of gravy) so def going to try while it's still a bit cold here in New Zealand. Am new to your channel and now subscribed, looking forward to checking out your back catalogue.

So refreshing to see a straightforward, common sense video! Most uploaders are try-hards, tbh. I too am a minimalist on the gadgetry and am all for easy, healthful meals. I utilise all the stems too, and some of the boil water to make soup or gravy. The only thing i don't use is tofu, even tho I'd have loved to, because I'm never sure which ones are GMO - all those labels and certificates are eye-wash, anyway.

I really appreciate you Derek for all the gorgeous, easy vegan meals you prepare for us. They all look yummy and delicious! This one is similar in ingredients that we used to call a 'boiled dinner' in England!! Then, many years ago of course we had meat instead of Tofu, I always hated meat when I was a kid so what a joy it is being vegan for the animals and myself. Love Frankie, I can see he eats very well, his coat is so shiny!

I have been Vegetarian for a very long time but(SORRY), began to eat fish when moving to the med. Only eat fish about once a month. I have been a professional cook and had two bakeries, one in Argentina and one ins Spain. You cook circles around me. Can’t wait to make this recipe for TWO people. THANKS SO MUCH for such inspiration. The Buddhists concept of life is so true and clean, although I have known them to be meat eaters???? Go figure. Anyway, it is a wonderful way to live.

One thing I found from another chef is to freeze the tofu and then thaw and cook it. The texture becomes meatier and is delicious when cooked. Your recipes are godsend!

Thank you for this. I love and cook tofu often but you just blew me away. I did this today and just had to cheat the mayo because my husband is a very picky eater so refuses mayo or mustards or onion or mushroom in anything. There’s an entire list but those are his main nopes. So I chickpea flour/oil/water not mayo ( even though that’s almost my mayo recipe anyways. He was in awe of this tofu. I used my convection oven air fryer.

Same about tofu. Only used soft tofu for blender dressings, always hated the bland tofu on the plate. But after a couple of his recipes---lions mane!--- l think I'm ready to try some firm ultra seasoned tofu as shown. Worth mentioning is that soy is one of the most heavily pesticided crops known to man. Be sure to buy organic and non gmo brands if you want to avoid glyphosate and the rest. Thank you Derek.

new sub here… something new to try … instead of cutting up raw … take one or more butternut squash … cut three 1 inch slices deeply into top one in middle & one on each end bake on low oven 230 apx… after a few hours the skin will thin & turn golden… slice open.. cool down on counter.. here s the secret… scoop the seed mixture out with all the stringies into a fine metal strainer.. take a large tablespoon & scrape all the seeds until all the flaverfilled squash concentrate is pressed thru … add THAT part in with the rest of squash to reveal a deeper squash result… I add extra virgin Organic 1st cold pressed Olive Oil … Bragg or Atlas makes are good ones…enjoy! ps more than one use ALL Same Size
