I like to cook it sous vide, you don't get dry breast that way.

Absolutely , I use sous vide often, nothing beats it for perfect temperature. But i would say not the best for crispy skin, in fact when i cook chicken sous vide i normally get the skin off and cook it separately for maximum crispiness.
