Weight limit affects your dodge, giving you the special blue dash when the weight says "Quick". This is affected mostly by your set class and blood veil, then you just equip a light weapon like the pipe or rifle. In the dungeon that gives the 2-handed sword and new blood veils, a certain combo of class and the new claw blood veil will give the 2H sword a normal speed dodge, instead of the SLOW one that most classes give. Made a HUGE difference when fighting those bosses.

There is a boss in the depths that you can fight after getting the depths keys, i fought it around level 20 or so, and let me tell you it was pretty infuriating. But he's play sekiro and dark souls so he might be able to handle it better than i did. Well aside from the fact it's able to one shot you if you are around level 20

5:40 yes you are correct. If you have a light character build you can do that dodge. Also, the depths in this demo is like 1000× easier

Your dodges are determined by what mobility you are at! On the equip screen, you can see that your mobility was Quick, which is why you were doing the dashes

Your guess on the weapon weight is correct. Having played the closed network test, I can confirm that. Looking at the weapon stats, the mobility will tell you, Quick meaning you’ll get the blue dash thing. One of the Prometheus abilities (might actually be the link ability with Louis) has that effect too. Ranger makes it easier by raising mobility, and most bayonets are light enough to do the blue dash as Ranger or Prometheus (if using the upgraded Ogre or Ivy type Blood Veils). I _think_ it also works with the pipe sword and Warrior, but I know it works with Ranger. Also, you can’t counter bosses at all. It’ll block the attack, but does nothing else. I tried for long enough with an Ivy-Type, Thorn-Type, and Ogre-Type. The Wolf-Type (I think that’s what they’re called) is just annoying to me. Finally, by running to the back of an enemy, you can get the same attack your counter would give you. You can actually just spam it, and it usually kills minor enemies.

Heres a tip....study the enemy. Look for slow attacks or how weapons move during in attack. Knowledge is a powerful weapon in games like this.

There is three movements: Quick; This makes you have further dodge, and more I-F. Normal; This is your medium dodge, it is the most common one. Slow; Heavy dodge, slow, and have very few I-F. How to get them: Depending on the Blood Veil, weapon in hand and the Blood Code you have, you have different settings for what brings you Quick, Normal and Slow. As in case a heavier weapon does not automatically mean slower dodge, since if the Blood Code supports a higher load so to say, they will be quicker. Example: One of the Blood Codes gives you 249.6 Weight load. However, if you get 50 weight, you are normal movement. 49.999 you are Quick. Another Blood Code that gives 120, gives quick with 80 weight. So it depends a lot on what Code and what Veil you have on, to determine what weapon to use for Quick. However, there is no need to worry about it too much, as long as you don't get Slow, you will be fine.
