I don't think you understand that 90% of restaurants, family owned and big chain would beg for a youtuber like Joel to promote their business. As a business owner there's more value in spreading the message, getting good reviews by a celebrities supporters etc than selling an extra 150-200 usd worth of food. (Which only costs the restaurant less than 100 for example)

This video will bring the restaurant 20k+ minimum in sales over the next 5 years basically guaranteed if they keep quality going, also boosting their standing and knocking out competitors. The reason it is easy is much of that needs preparation and long cooking ahead of time so it makes sense to cook huge batches and have it heated and waiting to serve. Then it can come out hot and fast. Rice and beans can keep over time without going dry if they have some moisture. Meats can soak in the sauces they cooked in for hours. Just makes sense time wise and all these foods just get better the longer they sit.
