The first fire truck is called a rescue engine, it multitasks as a fire suppression unit and special operations unit. The second fire truck is just a normal engine, the long tubes on the side is to draw water from large bodies of water such as lakes, like a tanker truck would!

To answer your question about the difference between the first two engines you viewed in the in game market, the first one is a squad designed for the squad companies of NY such as squad 1 or squad 252, the second one is a seagrave engine design used widely by the fdny

Most of this video is false half of the "engines" are just squads you can tell by the shape in the back the squads have compartments while as a engine will only have 2 tiny compartments on one side and rollup doors on the other. also, the 3rd truck that he shows is either a tanker or a foam tender which will only be used if there is low water supply you would barely see it on the roads. also, the "extinguisher" on top of the trucks are actually called deck guns also rac-1 is not an ambulance. Also, the 2nd truck is a regular engine and so are the other trucks built like it and rescue is used for special operations and technical stuff. also, the squad after the plain white truck is a 2nd piece for squad 252 and is the hazmat for squad 252. also, the very last truck is a tiller a tiller is a really great truck used all over the US and is not just a New York truck
