i miss the days when oxtail was considered a "throwaway" part of the cow. got mad expensive ever since white people started to become foodies. jamaican oxtail stew with rice went from $7.99 (large) to $19.99 in a span of 7 years. mind you inflation, but can't blame 300% increase on inflation

i love hyosin and sriacha in pho but i only use a little bit of it if the broth because it tends to be too overpowering messing up the original pho taste. But on the side for meat dipping is amazing. Im surprised you didnt put in any chili oil

Expensive pho should have another broth pot, a fatty broth (nước béo) made with leg bone marrow (xương ống). The only benefit of cooking the broth for a long time is to increase the gelatin content. People typically made the mistake of leaving leaving the vegetables and spices stewed for too long, which will turn acidic. Also, don't add fish sauce early if you plan to stew broth for a long time. Add it at the end.

One hour in a pressure cooker is equivalent to three hours on a stove. But you were right many people cook it for much much longer than that and I agree it's too much. I will definitely be trying this recipe. Thank you so much

*tip - I like to have a second pot of hot water on the stove, after the first 20 minute wash......you don't have to wait as long for the new batch of water comes up to temperature.

I’m in the know. You’re one percent Jamaican so like to incorporate lime for cleaning the Jamaican way along with boiling 15-20 mini the Vietnamese way to extract the impurities 😊❤

Hmm. I grew up with oxtail stew because it was the cheapest meat you could buy. Has it really gotten that expensive? That's weird. I remember when chicken wings were so cheap they were almost free too. Those days are long gone.

Hello Quang and to everybody who on Quang's channel. Love your channel. Just have 2 comments first is I didn't know until now when you mentioned About not adding hosin sauce and siracha sauce. I never use any of those sauces too when i go have pho. Just find it ironic that you said that. I love the stuff as well. Secondly is my question. In Vietnam what beef is mainly used ? Do they used oxtail? Thanks if you answer. But you're busy like the rest of us are I understand.

Can you make a 1hour bun bo hue please also showing how to cook the pork blood.. I see it in the grocery freezer section but unlike pho, bun bo hue seems so intimidating to make.

I can't say much on the pork blood cause i'm not a fan of it, but he made a video of cooking bun bo hue for 6-7 hours because of 4 different meats you use. It's only intimidating because you'll be in the kitchen all day Lol!

I have a question. does boiling the bones to wash make it lose flavor?

you just boil it for 5-10 minutes. basically "blanching" it to make the impurity solidify, make it easier to clean. bone need to be boil for hours to extract flavor so don't worry.
