What happens when a bag gets lost? Is that essentially someone overlooking something and putting it on the wrong cart, or it fell off somewhere (if thats even possible)?

it will eventually be found either by someone or by the system, which is then put as a “Rush” bag tag & will then be sent to a later flight to the original destination. The Airline of the missing bag will inform the owner of the bag that is put on another flight for them to pick it up

yeah, depending on the company, they will have you doing similar things, bagroom, ramp loading the planes and wing walking and some bag runners to bring bags after unloading to the airport carousels and a lavatory person to empty and flush the planes septic tanks
