The WSM is the own for me. Ive used the 18" since 2015. It's still in great shape. A little chip here and there I call them battle scars.

Brother - I love the WSM, great video. I've been using that one vent trick since you first mentioned it earlier in the year. That makes everything so much easier. I also use a diffuser plate in place of the water pan and prefer that method. I'll throw in an aluminum water pan for a longer cook, like a pork butt or brisket. I've added a wheel kit and drilled the vent tabs to add high-temperature handles. Besides upgrading the door, the "other" best upgrade is a charcoal basket from someplace like Arborfab. Makes the cleanup a little easier and adds between 3 and 4 hours to the life of the charcoal. All that stuff jacks up the cost of ownership, but if you're like me and add them over time as your experience grows, it doesn't seem too bad. I've since added a Gateway Drum to my lineup and love it, but I use the WSM way more than the Gateway. Cheers, Jim

I have abandoned wrapping ribs this year. I find they turn out better on the WSM. But, believe me, I've made some incredible ribs when wrapping too.

Hey how are ya brother? Couple questions if you don’t mind….I’m wanting to upgrade from my electric smoker as I’ve come to realize they suck and I can’t decide what to get. My budget is $400-$500. I really like the Weber Smokey mountain and the Pit boss 440 pellet smoker. My first question is when using charcoal as a heat source and then adding wood chunks for your smoke how does that compare money wise to buying wood pellets? I have a feeling pellet smokers cost more money to fuel? Secondly, I totally dismissed buying an offset smoker because I thought you could only burn wood splits in them. I didn’t know you could burn charcoal briquettes and just add wood chunks like the Weber Smokey mountain. If that’s true on all offsets then I might just go that route because apparently burning wood splits you have to really babysit the fire and I don’t want to have to do that. Any help/advice is appreciated!

Do you have only one vent on the bottom open? Just below the door and then leave the top vent open? Kid it gets to hot do you leave the top vent open and just adjust the bottom vent?

Only one vent open on the bottom, yes! I’ve found it very easy to control the temps at 275 or 300 that way! Top is always open, I never adjust it. I may adjust the bottom if needed!

I have one and I rarely use the bottom grate either. The WSM 22 can hold a ton of food. I've never had the need to cook a brisket and a couple of pork butts at the same time, but you can on this cooker. I think that's probably the reason you don't see people using it. Plus, the KZbin videos are usually instructional and it's not necessary to use both grates when demonstrating the smoker.
