I’m kinda constantly pushing Octane Render standalone because of how it handles geometry. Massive scenes no problem!

I think thats why Unreal Nanite was a game changer its like the proxy but automated real time with a very good render really that Unreal Engine 5 a big game changer

Isn't this the same as having LODs (Level of Details) that are automatically adjusted based on distance from the camera? And in addition to LODs, Unreal Engine specifically also has Nanite which does something similar for meshes that are built with or converted to Nanite.

Yes and no, same concept but maybe picture it backwards because it's not about what detail you can't see, but what gets it to run. Proxies are used to get the scene to load in real-time during production. Best example was fluid simulation. What's faster to iterate on? The final scene which can take days to render a frame or with proxies where the water might look like a collection of beads but at least you'll see how the fluid will behave in real-time.

I mean.... proxies are cool and all but high poly is still very costly when rendering, which is by far a bigger and more complex problem.

Depending on the proxy, it is also attached with an acceleration structure to keep the memory usage down to a minimum. That's how you rendered more than 400 million triangle scenes 20 years ago in a reasonable frame time.
