In the West, you buy mango-dried pulp with fiber in it and sometimes added sugar and mostly from commercial Filipino Thai, Mexico-grown Ataulfo mango. but in Bangladesh, people make Amsotto( thick like chapati made with mango juice by drying in the sun) in the villages and they are very tasty. Villagers eat them with milk and rice. I think you have sugar Cane juices. The Date tree juices are sweet juice and people drink them during the winter season and by drying the juice under a fire(cooking) and vaporizing the steam make it dense and either keep like Maple Syrup(called Molasis) or Cristalized and becomes a chunk of solid sugar. You said that you are from Essex. I used to work after my graduation and came to the village town center in Essex in South Woodham Ferrers, not far from Chelmsford(in the mid 80s).

@@carriepatsalis I like your videos made professionally. Actually, I visited all areas of London and some cities in England. when I was a student in the USSR, on summer vacation we went to work for 2 months to UK and also shopping at the same time that we can live in Russia that time well. Mostly worked in Bangladeshi restaurants as a barman + waiter. Twice worked in Brighton and Hove, Kings Lane, Croydon, Kent and Streatham, and some other places. We traveled by train from St. Petersburg to London via Belgium or Holand via ferry to Victoria station- a very long journey with Break in West Berlin. Puthia Rajbari, the capital of the temple, haunts my childhood memories. Cause on the ground floor of this palace was the first school of my life called "Puthiya Shishu Niketan". After school, we used to roam around this palace area and hunt for hidden treasures with my few friends. Watching your video after so long made me nostalgic for old memories. Thank you so much, one more thing you are missing the queen's bathing ghat in a corner of the lake behind the Govinda temple. I heard that the queen used to bathe there and enter the palace through the back door after worshiping at this Govinda temple. And there are several other beautiful temples in the Rajbari square, a little further away is the Hawa Mahal in a huge pond.

The mango cutting style you mentioned about, is not a bangladeshi practice. But many of us have learned it from internet. Now thats my favourite disciplined way of having a mango. CP, parts of incredible history nestle in places not frequently visited. Yet, here they are nostalgic of those who built and left behind to be admired now but if they are preserved they will be heritage of human history and archeology. Imagine the grandeur when these were built.

It's called a Chinese Bengali-style restaurant. Most of them are run by Bangladeshi and to show it Chinese sometimes they hire Bangladeshi tribal people, who look like Chinese. the sizeable Chinese population that thrives in the City of Joy hardly feels affected. Because they are more Bangali, than Chinese, speaking fluently in our language, wearing sarees, picking up Bengali cuisine, and even Indianising their own Chinese dishes. From celebrating the Chinese New Year with a great show to the Chinese breakfast of Tiretti Bazaar, the Chinese of Kolkata and Bengal have become part and parcel of this vibrant city. Back in the 50s or 60s, it was not such a common sight to find a Chinaman in your neighborhood and probably this emotion was reflected in Mrinal Sen’s Neel Akasher Neechey, where the Chinese man feels alienated. Chinese immigrants in Bengal who arrived majorly at the ports as laborers, sailors, and traders, gradually settled in this vibrant city. Tiretti Bazaar in Central Calcutta, was once the hub of 20,000 ethnic Chinese and even today reveals an interesting tale of a community that was once vagrant but industrious and resilient enough to survive and become a part and parcel of Bengal. The Hakka Chinese Community-Kolkata Chinese immigrants arrived at the ports of Bengal in the late 18th century and the first ethnic group who came were the Hakkas, a wandering community of China who spoke the Hakka language. In Cantonese, the word Hakka means “guest people” and not natives but wanderers, and so their origin still remains obscure. In British India, one gets to read about Yang Tai Chow, referred to as Tong Achew or Achi, who landed near Budge Budge in 1778. Little is known about his origin, other than that he was either a Chinese from Northern China or a Hakka from Guangdong or might be Cantonese. Even today the Chinese population of Kolkata that is fast dwindling believes he was the ancestor of most of the Chinese of the city. Also read: Kolkata’s oldest family-owned Chinese restaurant Eau Chew gets Heritage Eatery tag! Returning favors for a chestful of Chinese tea from Achi, Warren Hastings granted him land to set up a sugar mill in Budge Budge. This drew many Chinese migrants to work for him, thus marking the first Chinese settlement in Bengal. Some believe the word ‘chini’ which means sugar in Bengali, refers to the product that the Chinaman produced as well as their glazed pottery came to be known as ‘Chine-mati’ in Bengali. Even today Achipur, where he landed is referred to as ‘Chinamantola’ and there is the famous Chinese Temple where the Chinese New Year is celebrated every year with great pomp. During World War I, some skilled Chinese who had come as migrants took up shoemaking and carpentry as serious businesses and set up shops in and around Bowbazaar and Dharamtala. Along with that started the small eating houses in Tiretta Bazaar, which is still the hub of Chinese breakfast. No wonder Bengalis took to the flavors of China, being a gastronomical delight, and embraced their food. Today, we find Chinese food more popular in Bengal than Bengali cuisine itself. Gradually a part of the community also moved to Tangra opening their tannery shops, shoe making, and home eateries. However, the outbreak of the Indo-China war in 1962 dealt a severe blow to their survival and caused panic as hundreds of Chinese immigrants got jailed in camps in Rajasthan for interrogation. They were released but without compensation or apology after many years. Today, the population is dwindling, with most of the younger generation leaving for Australia and Canada.

20:03 looking at your video I feel like returning from UK forever & never go back. After coming to UK I really felt what I lost, Bengali people are so cordial and hospitable. They are so friendly too. Here in western countries you can see the difference, people don't talk with eachother if you don't know them & always suspects you if you go forward and starts to talk to them...

Hi Carrie, brilliant video as always. We don't actually make the hedgehog out of mangoes, it is more of a western thing I suppose, we are too busy devouring it, haha. And let me tell you as I am from Rajshahi, the mango of here has to be one of the best in the world, I will recommend you to taste the variant of mango called "Gopalvog", it is my favorite, the flavor and aroma is totally unmatched, do try it if you can. The shingara you tried they are pretty tasty if you don't mind a little spice, but you have to cool it down first to enjoy it, the trick is you break the shingara with your spoon into 3-4 pieces then it will cool down really quickly, you can then easily bite in to it. Also avoid Ilish fish, it is too bony for an untrained person, you will not be able to enjoy it like that, it takes practice to be good at eating bony fish.

@@carriepatsalis It must be an enormous hassle going home and coming back again! And also darn expensive! However, if you are doing that, I would suggest you concentrate on each zone of 1-2 districts (at the most) on each trip, and try and make the best use of time looking up the sites, instead on spending more time on the long travels. Meanwhile, on your next trip, try to collect a book named "Dekhun Bangladesh" (See Bangladesh)! Unfortunately, there is no English version yet. But your guide will be able to help you with the translations. It's a far better handbook than the Lonely Planet guide on Bangladesh.
