Got Rachel’s book! Wonderful! I was surprised that you only eat the bulbils and not the roots of the Chinese yam! I skin the roots wearing gloves (it can irritate your skin). I chop the mucilage rich roots into small chunks. Purée in the food processor. I don’t add any other ingredients. I make waffles and yam pancakes with the purée. They are fantastic! They also freeze well so this is how I store them. Love you all!

Thank you. Often, the roots go very deep and we just leave them alone and eat the bulbils instead.

The untrained Eye would NOT notice my living Food pantry. I have moringa, cassava, sweet potatoes, white potatoes, UBE, Taro, ginger, turmeric, and various types of edible ground cover and weed like leafy greens. PLUS the obvious climbing beans, squash, pumpkins, banana, papaya and fruit trees of Delandan, Guava, mango, and coconuts. There is NO obvious ROWS or organized Look, but we have more food than we can eat growing year round here on the KITAKITZ FARM

I have to harvest my ginger before the frost. There's no way it will survive in ground in East TN. My Vietnamese friends harvest it immature and just crush it up and use it fresh. I have a pot that will get brought inside for the Winter along with a purple sweet potato plant. They didn't produce well, so I'm attempting to have 'slips' to plant for next year off the overwintered plant.

About to get out and add to my forest after your video. Gonna add a cold hardy avocado("fantastic" variety) against a tree line and a few olive trees along the driveway. So many things to plant but I've definitely suffered analysis paralysis. Probably have 20 plus trees to put in from ginko to Texas persimmon. Just dodged that hurricane. Thanks for your prayers! Would have possibly been a home destroyer for us in a trailer. Hope those that suffered it receive some blessings too. Devasted the coast line along Western Florida up to past the bend a bit.

I've got some land now in the Japanese countryside (1.5 hectares). But the biggest problem is going to be wild boar. I've already encountered one while farming. I checked and this is also a problem for Alabama too. I'm just wondering what David or anybody else is doing about that. One simple solution is to grow things like onions, leeks, garlic, peppers and daikon because they don't seem to eat these things. But I want to grow potatoes, sweetcorn and sweet potatoes - and boars love that kind of food. What I'd really like to do is get some kind of wolf dog and keep it on the land but I don't know if there are such dogs. I'm not into hunting them and the traps seem expensive. Any ideas would be much appreciated.

Hello, I'm reaching out to you because I'm starting a project called the Highways and Hedges Initiative of Mississippi. The goal is to petition for food forests to become a common practice along highways, hedges, and other available spaces. We're also looking for individuals who are willing to donate their lawns or for organizations, such as churches, that may want to offer space for these food forests. This initiative is about fostering sustainable practices and improving food security across the state. I’d love to have your support or discuss how to get this kind of gardening a world wide consensus.
