When in Arcot, Northeastern Tamil Nadu, those in the know make a beeline for Chettiyar Mittai Kadai, home of the legendary makkan peda that was first made here nearly two centuries ago by Govindasamy Chettiyar, inspired by a mithai that he tasted in the palace of the Nawab of Arcot. I caught up with his fifth generation, Mr. Sundaram, to find out what goes into the making of this flour and khoa dumpling stuffed with a mixture of 11 dry fruits and nuts, before being fried gently in oil over a wood fire until golden brown and then left to soak in sugar syrup.
