A chef once told me, to prevent the sauce of the lor mee from becoming watery, don’t let the utensil that you put into your mouth touch the sauce. Eg. use chopsticks to place the food onto the spoon. You eat the food from the spoon, the spoon cannot touch the sauce. This way the sauce will remain thick. The reason is the enzymes in the saliva will breakdown the starch in the sauce. From then on, that is how I eat lor mee and the sauce remains thick till the last bite. You try next time.

I believe they ty to increase the shop quantity by erecting those hut-like "shops" in the middle of the ground floor, hence each one of them have their own "roof". There is a ratio imposed by BCA on the space in a mall that the developer can utilised for retail shops, so ya.
