the longer we let the dough rest, the more supple it becomes, and the less extra flour we need to add. Kneading by hand lets us develop a relationship with dough, so we know when it is ready simply by touch. I'm a ghostwriter, so I get much of my reading fix through writing. :D But I am on a Garrison Keillor kick at the moment.

Sunday mornings with Kevin while enjoying my coffee. What an interesting menu! Perfect for book club. Also great for a vegetarian meal. I think the falafel would also work topped onto a salad. The pita bread looks quite delicious. Beautiful viewer tea towel. Fun to see Goldie stretched out, lounging on the sofa. I enjoyed the flower store visit. Beautiful place and atmosphere. Wonderful dog greeter Harry. Those roses you purchased looked luscious. The farm store also a great place to shop. My friend belongs to a book club, but they meet at a restaurant. I'm not much of a reader myself, but maybe I should be. I'm a college graduate, but stayed in the arts mostly. Cutting and pasting, paper tearing, etc. I come from a family of readers though. Hi Kevin , I don't know if you and Mr.Fox like spareribs, if you do I thought you might like this recipe. For 4 people. 2 lbs country ribs (each rib is separated) Melt 1 stick unsalted butter,mix with 1/4 cup Worcestershire sauce, a pinch os salt and a couple of grinds of pepper. Put ribs in the sauce and let sit for an hour or two. Rinse 2 lbs sourkraut and place in a deep baking dish. Add to the sourkraut a cup of raisins or dried cranberries. Braise ribs until browned on the outside. Place ribs into the sourkraut. Pour remaining Worcestershire mixture over the dish and cook at 250 degrees until the ribs are fork tender. I hope all will enjoy this dish.

you are my calming moments everyday= I think I am now caught up on almost all for videos= thanks for keeping me company during knee replacement surgeries (both in 8 months) and now that I am back to normal- wait every week for your new videos (will admit your fall and winter ones are my favorites - because they are my favorite times of the year) live in the same zone as you so I understand all the snow - love your winter meals- and your fall and winter decorating- have now started using all the greens (evergreen) from my farm in vases (never thought to do that before) and we are making an herb garden with shelves in our bathroom window- never knew what to with that huge window - any ideas what to do with a million pinecones lol

Kevin! Your forsythias are glorious! I'm in planting zone 8b so my forsythia blooms in Feb. and lasts only a week or 2 before the temps begin rising and leaf buds open in their place. I'm never more impressed with anyone's cooking abilities than when they make any kind of bread. You act like there's nothing to it but I cannot do it! Yours turned out beautifully. Sounds like a great book club, Kevin. I'm reading a classic Chinese painting manual called The Mustard Seed Garden Manual of Painting, translated from the Chinese and edited by Mai-mai Sze. The original texts go back hundreds of years, with over 400 examples of brushwork. It's made me so much more observant of nature as I take such lovely walks this spring. It was mentioned on an Alan Watts talk that is part of a podcast his son produces. Thank you for the casual dinner with falafel, which I love. I look forward to trying this, as it is a delicious, healthy meat substitute. (I will try baking at high temp instead of frying).

The yoghurt cucumber sauce has lemon juice in it but you should try it with an added dash of balsamic vinegar. It just adds a pop of flavor! My Persian and Lebanese friends eat this kind of food all the time. I love it and Dutch and Indonesian and grew up in Australia. Now here in Virginia!

I can’t believe how many of your tools I also use. I have the spurtle, that dough whisk and just bought that wooden strainer spoon and small rolling pin three weeks ago. I just put pita bread on my shopping list. Not any more. Going to try making my own now that you’ve shown me how.
