”三杯豆腐” Three Cup Dish is a classic Taiwanese cooking that often features three main ingredients with a combination of soy sauce,rice wine and sesame oil.
The reason the “Three Cup” dishes are called is because it used an equal amount of the three ingredients which I mentioned. Fresh Basil Is a must have to compliments and completes the flavor.

Recipe:
480g firm silken tofu, cut into your fav sized
1 bunch of Thai Basil
5 cloves garlic
10g ginger, sliced
3 dried chilli, optional
1/2 tsp dark soy sauce
1/4 cup as needed
Sauce:
3 tsp soy sauce
3 tbsp rice wine
3 tbsp sesame oil
1 tbsp sugar
Seasoning flour:
1/4 cup flour
2 tbsp cornstarch
1 tbsp chilli flakes (optional)
Batter mixture:
1/4 cup flour
1/4 cup plant milk
1 tsp baking powder
1 tsp salt
Oil for cooking and frying
Method:
1.) Mix all the seasoning flour and set aside. Also mix the batter ingredients and set aside.
2.) Coat the tofu with the batter, then place the tofu into the seasoning flour. Generously coat with the seasoning flour and set aside.
3.) In a wok heat oil, fry the tofu till crispy and slightly brown. Remove from the heat and set aside.
4.) In a skillet, heat 2 tbsp oil over medium high heat. Sauté the ginger till fragrant, then add in garlic and dried chilli. Sauté about 1 minute, then add in the fried tofu and the sauce ingredients.
5.) Stif fry for 1-2 minutes, add in dark soy sauce and Thai basil. Stir to combine.
6.) Add in 1/4 cup water and cook till the sauce is thicken. Remove from the heat and serve with rice.
