can anyone please tell why we should omit stoich for atomic balance?!

Good question. In the atomic species balance, you are not concerned with any reaction at all. You are only concerned about what atoms go in and what atoms go out. The stoichiometry is used to work with the molecules, so that you know how they react to form other molecules and it is important that it balances out. When you are counting atoms it is irrelevant information. (The balance still works out because you take into account the number of each atom in each molecule.) I hope that helps.
