@@davidantill6949 Perilla (Asian basil) is antioxidant and antibacterial, and has anthocyanin which turns red when it's mixed with acid. Mume (Asian plum) produces vinegar when it's pickled with salt. By rubbing salt into Perilla, it removes Lye (bitterness) and moisture, and without Lye the color will turn to bright red. If you don't remove Lye by rubbing salt in, the color would be dark red when Perilla is mixed with acid, and if it is moist, it could make pickled Mume moldy.
