OMG!!! I truly enjoyed your video. First of all, your bolillos look super deliciosos, don't you love the rustic look and flavor? Second of all, thank you for trying my recipe!! I developed it with mucho amor because I was missing the bolillos from Mexico (the ones I found in the stores here are way too soft and don't taste the same, in my humble opinion). I'm so happy you decide to give it a try. I know when you read the recipe it feels overwhelming but let me tell you something, once you make bread once, it's easier the second time, and your bolillos will get better and better. Let's look for a warmer area next time so you don't have to wait as long (I usually turn my oven on for a minute or two in the lower setting, turn it off-super important of course!, make sure is 100 F and place the dough in there, it works like a charm). I was laughing when I saw you took a picture of the dough before rising, I do that as well!! 😀 Yes, let's collab!!! Hugs from California.

Baking tip: To proof (rise) your dough, put it in your oven (don't turn it on). Just leave it in oven and allow dough to rise (keep in there based on your recipe's instructions); it's an ideal condition where yeast can activate.

Try kneading the dough longer to get it smooth before letting it rest. When you proof the dough (aka let it rise) put it somewhere warmer. Most ovens have a "proof" setting, you can also put it in your oven with just the light on, or place the bowl with the dough over a pot of hot water (but don't let the bowl touch the water). Also make sure your yeast hasn't expired because that can keep dough from rising as well.

I always proof my yeast in warm water (95-105 degrees). If it's too hot for your hands, it's too hot for yeast. I'll add a couple pinches of sugar, and wisk it, then let sit for 5 minutes or till it gets foamy. That will tell you if the yeast is active. Just a quick tip Btw, the bolillos look amazing!

You don't need to take over something for food to spread to another culture, if it tastes good there's a good chance it will be copied by the people of where ever you first introduced it. Tacos al pastor for instance originated from Lebanese immigrants to Mexico when they tried recreating their version of shawarma in their new home.

@@robello1740 I wasn't denying the fact that the French more or less took over Mexico for about 6 years when they installed a puppet government back in the 1860s, just that you don't need to do that for food to spread, especially if it tastes good lol.
