Hi Julian, thanks for the review of this coffee. Currently enjoying this year’s release of Tatmara Natural from Tim Wendelboe. Happy to say that the coffee is again wonderful. Lovely tropical fruit and strawberry flavours. Not usually a fan of naturals but this is such a clean coffee.

So glad you reviewed this one! I just opened mine! Im running this alongside the shoondhisa from Manhattan (ture waji) - which is a verrry interesting coffee. Have you had a natural from ture waji?

Yup, that Shoondhisa too, just never reviewed it (drink a lot of coffee we don't review as well). At the cafe, they did an excellent job with it. Hopefully you have as positive of a reaction with this coffee that we did but it will make for an interesting (and flavorful) comparison on your end

The Tatmara Washed coffee that Tim Wendelboe recently released for the first time is also delicious. Lovely citrus, floral and peach notes. At times I thought I was drinking a Geisha coffee it was so good. I think they released it only to subscribers but may have some more for sale later in the year. Definitely worth checking out if they do.

They offered a washed Tatmara this year? That's super exciting! The issue we often come across with roasters like Passenger, TW and April is that they offer a lot of the same coffees every year so we often have already reviewed a lot of the coffees that they offer. If they have it, we'd be very excited to review it. Appreciate the insight 😃

Hi, I just found your channel. I have loved your reviews, and I was curious as to what your grinder and water are. I know these factors can highlight very different expressions of coffees. Just wanted to be a bit more calibrated! Keep up the great work!

Hey Mack, thank you very much for the kind words! You're absolutely right, especially with the water. Grinder is nothing special, just the Virtuous+. As we always say, the plan was the Ode but the negative feedback upon its initial release pushed that back. Water is a very important one but we use three different waters depending on the coffee. A lot of influence was taken on Coffea Circulor's recipe with a pretty soft water at around 25 TDS (though it's been a bit since we measured it) while the others are mostly at higher contents

Just finished the bag. It was a TWs subscription this month. Agree with all aspects of your review including the enjoyment of it. Nice solid juicy body and strong berry sweet. Tea, the one time I did experience it, was nicely well defined though too dominant (got rid of it through ratio and grind). I found it sensitive to ratio changes.

As someone who advocates for the use of brewers that are versatile and are designed with intention I’d love to know why it is you use the Chemex? Aside from the difference in body, I’d love to know what you feel are it’s biggest pros when brewing coffees.

Hey Ian, that's a great question. What the chemex often offers is maximum clarity. Body isn't a top priority but clarity is, so the sacrifice/trade-off is often worth it. When I began drinking coffee (over 10 years ago) it was the easiest way for me to learn to taste flavors in it. As such, it can still feel like cheating at times when it comes to creating clarity on flavor profile
