Save yourself a load of time, buy some pancetta (Essentially what he made) or guanciale (If you can get some much better than pancetta). The ricotta looked spot on but that wasn’t proper mozzarella, can but a ball of fresh mozzarella and rip into prices similar to the ricotta. The dough is easy enough and the sauce he did was just overkill 😂literally just need some plumb tomatoes, basil, olive oil and salt/pepper and blend it. Get the pizza oven! Can cook roast meat in it and all sorts, adds a grate taste similar to grilling 👌
