In regard to the ice in the deep fryer: water and oil naturally don't mix so when you add water/ice into extremely hot oil, the water vaporizes instantly and begins to break down the oil. As the steam from this reaction escapes it causes the oil to foam and splatter. This can burn bystanders and potentially start fires. One ice cube in a deep fryer is no cause for concern but if you toss one here and there, over time the oil quality degrades and can have a negative effect on the flavor of the food cooked in it. Ideally, restaurants, depending on how busy they are, should be changing their fryer oil every couple of days and cleaning the fryer every day.

The way you clean the fryers is by draining them, and then you use a special brush or pad to scrub it clean. I think the one we had where I worked at once has a cleaning mode that cycles through with fresh oil to fully clean it. You are to never put ice or water in the fryer that could have been so bad for the person filming it.

no you’re not supposed to put ice in a deep frier on or off i worked at mcdonald’s the way it’s cleaned is it will have a button that drains the oil cleans it and puts it back into the area the oil sits in if you put ice in the deep fryer the oil will think it needs to fry it while the ice is trying to cook it down causing the “explosive” reaction the oil gives off and if you’re close enough you could lose your face or a hand because it will burn past 3rd degree burn
