It was so interesting to learn that this was Daniel's first coffee job as when we were at the cafe this summer, he served us the first round for our tasting and he was very knowledgeable and provided a great deal of information. It's also heart-warming to know that people without a formal coffee background are welcomed as team members; I think that speaks volumes about how much the company values people.

Second month in my subscription and I should have done this sooner! This is so much fun to taste my first brew each month while watching your subscription video. I really enjoyed the Echemo, very surprised it's an Ethiopian and I thought "orange" when you mentioned colors before you said yellow-orange. I tasted just a little spice too, it's yummy, comforting and perfect for the season. I brewed V60 today, will try Aeropress tomorrow. See you next month😍

Coffee convert from the world of whisky tasting here. Excited to try so many different flavours and experiences. For specialty coffee like this, how long can I keep the beans for before I should have ideally used them up?

It really depends on how you store them. If in the original bag sealed, 5-6 weeks. When opened, keep in the original bag and use within a week or two. If you need to keep it longer you can freeze the beans, but maake sure you use air tight bachs and squeeze out the air. Also Ideally you let the coffee rest for at least a week after roast date before you use it. Hope that helps.

Great video. Always love hearing the back story of the coffees and how you are appreciating them as filter, since I normally drink just espresso. Would like to hear a little bit about espresso preparation as it pertains to the coffees of the month like what is working in the cafe recipe-wise, for example, 1:2 ratio, 1:2.5 etc. Keep up the good work, we all really appreciate how much care and thought you put into these selections.

@@constantinedinocopses6806 Yes, for sure. They will have a slight lower acidity but flavour notes should be similar.

I like to taste these coffees blind after receiving them (avoiding this video and the e-mail until then!) to try to guess the origins and varietals. My partner is kind enough to set them up for me, so I don't have any hints. When I tried the Los Pirineos, my initial thought was that you had started purchasing Brazilian coffee again! Interesting that you noted the similarity as one of your reasons for purchasing it.

@@Gaverny I've done them as a tradtional cupping, 3 aeropresses, and also with just a V60, but I actually prefer the latter, as it's my usual go-to for brewing each day! I make sure to grind them all before I start the first brew so that there won't be much time in-between brews and then I'll give them some time to cool down. It can help to cover the ones that have already been brewed if you aren't doing a regular cupping, as the temperatures will be much closer :)

@@ToferDub awesome ! Thanks for the reply. I just watched a James Hoffman video on his cupping routine. He basically just pours boiled water over the grounds, removes some of the floating grounds with a spoon, and slurps the top bit. Is this how you go about it when you do a cupping? I have a V60, a Mochamaster drip, and a little breville espresso machine. I'm excited because I also subscribed to 1 espresso bag per month.

@@Gaverny Yup, that's pretty much it! The reason why I prefer to just prepare a normal V60, though, is that I can enjoy drinking the whole cup afterwards instead of having to discard the remaining part. I think you're going to love the subscription; it has been fantastic recently!

I can’t stand delicate, floral coffee. If I wanted tea, I would have made tea. Try selling me full bodied medium dark beans with chocolate and caramel under notes.

Then I think our subscription is not a perfect fit for you. But that is totally fine that you prefer othger styles of coffee.
