Some of my lemons are huge but have very thick skins, is there anything that can help that?

In Arizona sun and heat the recommendation is to prune to a bush shape not to the open center, and keep the trunk shaded. What do you think?

In a very hot climate where temperatures can get quite high I would agree with you. Citrus an be prone to experiencing burning of the trunk and stems when there is no shade. This is why you will find some people paining the trunk white in hot climates. I find deciduous trees like peaches, apples, nectarines, plums, cherries respond best to open case pruning. Citrus isn't too fussy as long as you train the tree to the shape that you like and remove criss crossing branches and dead and diseased wood.
