I often only draw a part of the reference image and usually remove fences and power lines; I think it separates the viewer from the nature that lies behind it too much.

One thing I find really difficult is drawing something the other way round For example if I am drawing a dog or a birds the head is always to the left ??!!!

Are you righthanded by any chance? As having things facing the left is often a trait of righthandedness, and facing the right, lefthandedness! You could try a trick of turning your paper upside down, as well as the reference you're copying from, then it will face the right unitl you turn it right way up! I tiwill help get the basic shapes in for sure.
