Why did we not substitute the domain x>-1 while finding out the range of the first number?

If you sub in -1 you get 1. But the lowest point for the domain -1

In question 3, how do you know x=-3 will exactly stop at y= -5? Will we be given grid paper to draw the graph ?

You won't be given grid paper no. For the graph of y = |x + 3| - 5, the vertex can be immediately identified at (-3,-5) in the same way as you identify the turning point from the completed square form of a quadratic.

for the first question, how is the y value 0 for -1? do I not go across and find the value?

You don’t go across from where x=-1. From the graph you can see that the lowest point is when y=0, so that is the lowest value in the range.
