She used to make a coconut cake every year for dessert on Easter, and I always thought it was the best. And I was very blessed that she gave me the recipe before she passed on. Great video! I miss my mom too especially at this time of year. For my coconut cake I use 1 1/2 cups coconut milk and 1/2 cup desiccated (dried ground) coconut from Amazon. I love coconut but my husband doesn’t. The coconut is ground very fine so you barely notice the texture but the flavor is great. 💚💚💚

I get it too, Ms. Donna. I miss my mommy which has been a year in October of this year. I truly miss when she would cook our Christmas dinner, while listening to Johnny Mathis's Merry Christmas album which was her tradition for us as children and as Adults. She would bake her Chocolate yellow 3 layer cake and her Coconut cake ( from scratch because box cake was not happening at her house 🤦🏾‍♀️😂) the day before her cooking. I get so emotional😔 before and during the holidays because now she is with the Lord, its hard to just listen to traditional songs she played, and cooking the Christmas dinner which my sister and I are doing since we live together. Ms Donna, there is a difference in textures of cakes and pound cake. pound cake, the texture is dense where as the velvet cakes is lighter in the texture. the lightest texture is the Angelfood cakes where the texture is much lighter than the regular cakes (more marshmellow )

Donna I bet the cake was delicious! I have two tips for you number one, instead of jello fresh raspberries with sugar added cooked down similar to a jam strained and spread it in the middle of your batter. Second, would be to use a liner in the bottom of your pan when you're using jello. God bless you and Dude #1.
