Are these the most suitable type of shears / snips for thinning out fruits?

They'd work, but are overkill, and probably too big. I'd use simple snips, like this www.niwaki.com/store/niwaki-forged-snips/

The "Tobisho Pruning Shears SR-1 200mm Bonsai" (as listed on Amazon) are the gold standard for Japanese thin (up to finger width) fruit branch pruning secateurs. For anything thicker I'd go with a Japanese pull handsaw. There are more modern ones in similar style like the Silky Zubat or Samurai Ichiban saws that are popular these days. Though personally, being an eccentric hobbyist, not a professional that has to process a lot of trees, I use an Okatsune handsaw with wooden handle and sheath and Tobisho 180mm Type A Bracket Stop secateurs.
