Since he's named after the food, it would be spelled Quiche. The manga spelled it as Kish so younger readers would know how to pronounce it. Fansubs didn't bother translating his name (or was just being weeaboos about it XD) and spelled it as Kisshu (since that's how it sounds when the Japanese try to say Quiche XD).
