It's a language thing. People usually associate fruits with things that are sweet, and vegetables as things that go with salads or something. But the way botanists categorize fruits is the seed-bearing structure in flowering plants. The things that plants produce to encourage animals to eat it to disperse its seed. Some would say vegetables could be an umbrella term for anything that includes the structure of the plant. But I prefer to refer it the green stuff, so like the stem or the leaves. Carrots and potatoes are the root of the plants, a kind of tuber.
