I am struggling to finish my projects, I have 3 projects incomplete one is around 90% complete, one is done with blocking and current project on blocking plus and I am feeling that i'll abandon this one as well , the problem is I start with something new and since I am new to animation it takes weeks to plan and animate and I get exhausted with the notes and no ups/ motivation so I just don't want to see that project again and abandon it, i'm stuck in this loop what should be my approach to this?

I'm in the same situation as you, I have like 10 unfinished project and even more animation ideas that I want to make but every time I finished them or in the middle of the process I feel like they are trash and that I'm not good enough especially when I compare them with others student from others school (I have almost learn animation all by myself because my school was trash and "teach" us just only the basics of the basics and not event all of them) , so I just abandon them too. I have to do an internship to get my diploma but no company wants me so I lose motivation to animate. I think we just have to keep doing animation, try to upload them on animation forums or discords to have feedback and try to get better (sorry for my bad english)

animation can be w a tedious process. sometimes you can get stuck having problems with your animation and spend forever trying to make it look better but yo no avail. solution: get a mentor. a mentor will point out the problems ans most likely how to fix yhem. a good one will open up your file and do iy live for you to show you. this should speed up the process and make you feel like uou are making progress. when you’re making progress, you’ll feel more excited and less likely to abandon the project. ive been working 4+ months on a 30 second multi character shot and i’ve been eager to finish it and get onto the next thing but since i make progress and have a mentor to quicken that process up, i always will find myself falling in love with my project over and over again. hope this helps.
