Tip for visitors: look around for a condiments table in the shops. You can ysually find one with hot chili, shallots, cilantro etc You can add those to taste. For eg, for the beef noodles, you are supposed to add pickled mustard leaf, chili, green onion, cilantro. The dumplings are usually eaten with vinegar+soy sauce+ chili+garlic paste sauce.

You've nearly listed all the coveted eateries, but Ay-Chung Flour Rice Noodle was missed. I suggest adding it to your itinerary for your next visit to Taipei's XiMenDing. Any local youths should be able to guide you there, or simply look for it across from the well-known Japanese fashion store, Uniqlo. Once again, your facial expression truly conveys your enjoyment and appreciation of the flavors.
