I think the Betrayal at Cloud City set deserves a mention. It had 18 minifigs, a Han in carbonite, comes with Boba Fett's Starship and has most of the same things seen in Empire Strikes Back on Cloud City, but it is retired

Two more that I would put on the list are the USC Super Star Destroyer and the Razor Crest, I've never owned any UCS sets but I've wanted the Super Star Destroyer for so long and the Razor Crest is possibly the cleanest looking, most detailed set I've seen out of Lego Star Wars, at least in a long time

UCS Death Star II would be my favorite of this list for two reasons. (1) The Star Destroyer orbiting it for scale and (2) unfinished but still able to fire. I’ll never forget that scene!

Look dont worry. In 10+ years time, if theyre still making lego star wars (and they havent part saved to the point that ucs sets are keyrings) id expect the majority of sets to be prequel based. There's still a few years left of the original trilogy generation and with the new stuff its all a bit unfocused.
