Basically because out of the 700 chapters they only have 15 pages of interactions and all of them are platonic on Naruto's side. Kishimoto originally had Naruto marry Sakura to complete Sakura's character of maturing but his editor told him to switch the pairings at the last second because Hinata is more popular in the west. So Naruto The Last was made as a last minute retcon to force Hinata into being a relevant character (not just relevant the main heroine of the series) They literally had to retcon Naruto's entire romance for Sakura as him "pretending to like her" and literally retconned the whole point of the series (Team 7 and Iruka saving Naruto's loneliness) to Hinata being the one who saved him and Naruto is guilt tripped into a relationship with her because for whatever reason even though she never helped him with his loneliness, knows nothing about him or cares about his dreams or bonds she deserves his love because she stalked him as a child. That's why people don't like Hinata because she's a chauvinistic cardboard cut out of a character whose dream in life is to be a submissive housewife to a boy she knows nothing about and barely even talks to. Which is also a reason why she is super popular among the neckbeard waifu demographic.
