In my opinion, in Major League Baseball (the top tier of American/Canadian baseball) the games have become so slow, rule-laden, and technical that it's no longer fun to watch. KZbin recommended these guys the other day and this is way more fun the typical professional baseball. I've not watched too much, but as far as rule differences, in "regular" baseball they aren't keeping a tally of 'trick plays' and a foul ball hit into the stands that is caught by a fan doesn't count as an out. Anyway, sorry for the long-winded response! Check out a professional game. Also I think college baseball is fun to watch. And hello from Florida!
