Haven’t played since pre Covid. Is there a new rule where a single player can hit twice in a row as long as the first touch was defensive? I saw a few clips where this happens

Yep, the rule is called the "soft touch". If the ball is in an upward trajectory when you make your first defensive touch, you can then set the ball to your partner, taking the 1st and 2nd touch. Then your partner has to put the ball on the net with the 3rd touch. Makes for some really interesting rallies!!

In Europe we tend to ignore carries on first or second touch if the amount of effort to get a ball is huge and rather prefer to applause. Look at the face of Jakub after they got that ball onto the net. Just awesome ;)
