Dandelion and lambs quarters are my favorite to eat. Others that I don’t find palatable or too old I put in apple cider vinegar, raw with the mother and make an oxymel. That way I can still reap the benefits. Or I tincture them. Great video!

Is it safe to eat nettle that's growing ~10 feet from a road? The high iron content makes me wonder if it would absorb up other unwanted metals as well.

Honestly it’s pretty hard to know how contaminated soil near roads is. There are some things to consider like how much traffic the road gets, how recently it was paved, and is it above where water would runoff from the road. Personally i have harvested that close to some less traveled roads that seemed cleanish. You could even send a soil sample in to get tested if you were curious. Maybe I should do that for a future video!!
